BBQ ideas for vegetarians – Smoked Carrots

 20 ounces of raw baby carrots
2 cloves garlic, minced
2 tablespoons butter, cut into small pieces
Salt and pepper to taste


Prep time 15 minutes
Cook time 60 minutes

Preheat the grill for high heat.  250 – 300 degrees F.

  1. Place the baby carrots, garlic, butter, on a double layer of aluminum foil large enough to wrap contents and place all into a small aluminum pan.  Do not close top of foil, leave open for the smoke.  Season with salt and pepper. 
  2. Place on the smoker, and cook 30 minutes, close aluminum foil to enclose the carrots, continue to cook until carrots are tender.

This same recipe is great using sliced radishes instead of carrots.

  1. This looks wonderful for meat eaters as well. I am partially vegetarian, only eating chicken and turkey, salmon and some white fish. I love BBQ, so will be looking for more ideas based on this dietary choice.
